Delicious Healthy Cinnamon And Raison Protein Cupcakes

Ingredients

  • 2 eggs
  • 1 sachet/cup porridge oats
  • 2 scoops whey or casein protein powder (strawberry and vanilla work well)***
  • cinnamon
  • handful of raisons (or raisons and cranberries)
  • splash of milk
  • teaspoon of vegetable oil
  • splash of water

***With the protein powder, unless you are very into your exercise and weight training then don’t worry about which brand or type you get as long as it is just a whey or a casein protein . . and obviously the flavour you would prefer!

 

How To Make

  • Mix the eggs and porridge in a bowl with a fork before adding cinnamon and raisons (or raisons and cranberries) and mixing further.
  • Add 2 scoops of either whey or casein protein powder – strawberry and vanilla work well but feel free to try any flavour you like – the teaspoon of oil and the splash of milk and water.
  • The consistency needs to be quite thick like a doughy kind of texture.
  • Place the mixture into the cupcake trays and place in a pre-heated oven on gas mark 4, or around 180 celcius, or 350 fahrenheit depending on your oven.
  • Heat for around 15 minutes then test that they are cooked by piercing one with a fork. If the gooey mixture is on the fork they need longer otherwise they are ready to eat.
  • Enjoy either hot or cold!

470kcal, 50g protein (depending on your protein powder), 33g carbs (15g sugar), 14g fat, 3.5g fibre
