Fudgesicle Frosty

Ingredients:

  • 2/3 cup coconut milk
  • ¼ cup agave nectar
  • 1/3 cup cocoa powder
  • 4 medjool dates, pitted
  • ½ large ripe avocado, peeled and pitted
  • 3 cups ice cubes

 

Directions:

Add the first 5 ingredients to a jar and secure the lid. Next, select the sauce blend category.  Blend briefly and then add ice cubes to the jar and secure the lid once again. This time select the ice cream category and keep blending until smooth.  Serve immediately.

Maple Pecan Sandies

Ingredients:

  • 2 cups almond flour
  • ½ cup coconut palm sugar
  • ½ cup palm shortening
  • ¼ cup maple syrup
  • 1 tsp. vanilla extract
  • ¼ tsp. salt
  • 1 cup pecans, finely chopped

 

Directions:

Preheat the oven to 350 degrees. In a large mixing bowl, combine the shortening, maple syrup, sugar, and vanilla.  Next add the almond flour as well as salt, and mix thoroughly. Fold in the pecans and then roll a tablespoon of dough into a ball and place on a parchment covered cookie sheet. Bake for 10 minutes.

Chocolate Cinnamon Truffles

Ingredients:

  • ½ cup raw pecans
  • ½ cup raw almonds
  • 1 tbsp. cocoa powder
  • 10 dates, pitted
  • 1 tsp. cinnamon
  • Seeds from 1 whole vanilla bean
  • Shredded coconut with cocoa powder to garnish

 

Directions:

Begin by combining the pecans, almonds, and cocoa powder in the food processor. Next, pulse until you have a crumbly mixture, but before it’s turned to powder. From there, add the dates and pulse blend again until the mixture is formed. It should be paste-like at this point.  If the mixture is too thick, add 1-2 tbsp. of water. Transfer this mixture to a mixing bowl and then add cinnamon and vanilla bean seeds, mixing well.

Form the mixture into 10 equal sized truffles and roll them in the shredded coconut and cocoa powder. Store in the fridge for up to 2 weeks.

Banana Bread

Ingredients:

  • 4 ripe bananas
  • 4 eggs
  • ½ cup almond butter (or any nut butter)
  • 4 tbsp. grass-fed better, melted
  • ½ cup coconut flour
  • 1 tbsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • Pinch of sea salt

 

Directions:

Preheat the oven to 350 degrees F. Next, combine the bananas, eggs, and nut butter along with grass fed butter in a blender or food processor.

Once well blended, add in coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt, mixing well.

Grease a 9X5 inch glass loaf pan with any fat choice and place mixture in it. Bake for 55-6 minutes or until a toothpick comes out clean. Remove from oven and flip onto a cooling rack for 30 minutes before serving.

Apple Pumpkin Butter

Ingredients:

  • 6 apples, cored, peeled, and sliced
  • ½ cup pumpkin puree
  • ½ cup coconut milk
  • ½ cup chopped pecans
  • 1 tbsp. vanilla
  • ½ tbsp. cinnamon
  • 1 tsp. nutmeg
  • Pinch of cloves

 

Directions:

Line the bottom of a crockpot with the apples. Next, in a mixing bowl combine the pumpkin, coconut milk, pecans, vanilla, cinnamon, nutmeg, as well as cloves. Mix well and then pour this mixture over the apples in the crockpot. Set on low and cook for a minimum of 6 hours or on high for 3 hours.  Once cooked, place in a food processor and blend until a smooth butter is formed.

Chocolate Cupcakes

Ingredients:

  • ¼ cup coconut flour
  • ¼ cup cocao powder
  • ¼ tsp. celtic sea salt
  • ¼ tsp. baking soda
  • 4 large eggs
  • ¼ cup coconut oil
  • 1/3 cup honey

 

Directions:

Pulse the dry ingredients together in a food processor. Next, pulse in the wet ingredients and then line with a 12 cup muffin pan with paper liners, adding about ¼ cup into each.  Bake at 350 degrees for 15-18 minutes and then cool and serve immediately.

Ingredients:

  • 1 cup dark chocolate chips
  • 1/3 cup coconut oil
  • 1 tbsp. vanilla extract

 

Directions:

In a small saucepan over very low heat, melt the chocolate and coconut oil. Next, stir in the vanilla extract and place frosting in the fridge for 15-30 minutes to thicken. Remove from the fridge and then whip with a hand blender until thick and fluffy.  Frost over desired baked goods.

Double Chocolate Chunk Cookies

Ingredients:

  • 1 cup almond butter, freshly ground
  • 1 egg
  • ¼ cup cocoa powder
  • ¼ cup chocolate chips
  • 2 tbsp. vanilla extract
  • 2 tbsp. – ¼ cup sugar (optional)

 

Directions:

Preheat the oven to 350 degrees F. Next, combine all the ingredients and mix until thoroughly blended.  On a parchment lined baking sheet, separate out the cookie dough batter by the tablespoon. Flatten them into a ball and then bake for about 12 minutes or until the cookies are hard to the touch.

Cherry Strawberry Ice Cream

Ingredients:

  • 1 13.5 ounce can of coconut milk
  • 1 10 ounce package frozen strawberries
  • 1 10 ounce package frozen cherries
  • ¼ cup agave nectar
  • 1 tbsp. vanilla extract
  • ¼ tsp. almond extract

 

Directions:

Blend all ingredients in a blender and then pour into an ice cream maker and process according to instructions. Serve immediately.

Apple Pie Caveman Bars

Ingredients:

  • 2 cups dated, pitted
  • ½ cup raw macadamia nuts
  • ½ cup dried apples
  • ¼ cup raw almonds
  • 2 tbsp. coconut oil, melted
  • 2 tbsp. cinnamon

 

Directions:

Place the dates, nuts, and apples in a food processor or very powerful blender. Pulse until all dates and nuts are in small chunks and then move to a mixing bowl. From there, add all the remaining ingredients.  Using your hands, mix the ingredients well to ensure even coating of everything.

Once mixed, using parchment paper, flatten out the mixture to form the bar size that you’re going for and then place them in the fridge to cool.
